Hi everyone! Hope your day’s been going well so far!

My test this morning was more difficult than the one I had on Monday (I only missed one question on that exam!)– at least in terms of how the problems were worded. I had to re-read and re-work each question like 3 or 4 times on some of them, and ended up NOT actually being the first one to finish today haha.

I do however think it went pretty well, especially after corroborating on answers with classmates when we were done.

Anyhoo, I ACTUALLY spent time on hair and makeup and wardrobe today– sometimes inspiration just hits!

I curled my hair with my straightening iron this morning! I have to confess that I stayed up later than I wanted to last night watching tutorials for it on youtube– all that REM sleep cementing my studying also helped me to process the whole technique haha! I woke up and got to curling and it was easy and turned out awesome 🙂

The reason I fixed myself up today was two-fold:

First, I HAD to fix my hair because tonight I’m going to a meeting tonight where I’m going to network with a lot of local optometrists– they have a speaker coming, plus a free sit-down dinner and cocktail hour. It’s just me and three other students going to represent our school, so I need to dust off my business cards, make myself look professional (and not like I’m perpetually 17yrs old), and get to shmoozing!

Secondly, I have a problem where if I fix up one thing (say, my hair), then I feel like I should do my makeup to match, and then I should have a nicer outfit– it snow-balls. It’s a weird sort of all-or-nothing for me. The majority of the time though I just say ‘screw it’ to all of that and look totally sloppy haha.



My eats have been kind of all over the place– last night was a weird day where I sort of had two lunch/breakfasts (big smoothie an hour after a SSB/banana/chia wrap)–

…and so dinner was just snacks:

–plus an unpictured apple and bag of popcorn.


This morning I fueled up for my test with the usual:

gotta perk up those neurons!

–plus an unpictured Lara bar 🙂

Can we talk about this for a second??


My Hubs is on a business trip in the Midwest right now, and instead of going out for dinner on the company’s dime, he expensed the above groceries for dinner!

Lets see: crusty bread, bananas, Justin’s individual almond butter packets (!!!), apples, Clif Z-Bars, mixed nuts, almond milk… and he told me he even got himself a coconut water at the airport the other day!

A man after my own heart, as I would gladly devour everything in that picture 😉

At some point I’m going to have the Hubs do a little guest post, talking about how we’ve evolved our eating habits over the last few years. It’ll be fun to have a little man-perspective up in the healthy-living blogosphere!!

Baked Ravioli with Eggplant and Broccoli

Hi lovelies! Hope you’re having a nice day today!

I’m busy with classes and a TON of studying for my test tomorrow– in fact I’m likely going to be locked down for the rest of my day.


For ‘breakfast’ today, I went with the usual iced coffee and had a chocolate chip brownie bar (clean ingredient list, I promise!)

And then left for my first class looking like this:

not-yo nachos! har har. organic corn chips, refried black beans, goat gouda, salsa, green peppers, and love.



Anyway, I’m sitting here blogging and printing out about a million pages of notes to study from later, so as that’s going I’ll write up a little ‘recipe’ on my dinner the other night– it was a good one!



Baked Ravioli with Eggplant and Broccoli

serves 2-4, depending on hunger level!


  • 1 package of fresh, uncooked ravioli (your favorite flavor, I used goat cheese and sun dried tomato)
  • 1 whole eggplant
  • 1 head of broccoli
  • 1 16oz jar of marinara sauce, your choice
  • 1 cup of ricotta cheese, I used 0% fat but your choice
  • seasonings: salt, pepper, garlic powder, red pepper flakes (optional)
  • 1 teaspoon olive oil


Start by preheating oven to 400 degrees, and then cut eggplant in slices lengthwise. Use this preheat time to also cut up broccoli into small florets, feeling free to also use most of the stem.

Place eggplant on sprayed cookie sheet, then spray with olive oil and season (salt + pepper + garlic). Bake in oven for 15-20 minutes. (I didn’t do this, but I would next time because my broccoli didn’t end up cooked enough: spray down another cookie sheet and arrange broccoli- spray and season and place on another rack in oven.)

Set water to boil in a large pot now- and when it comes to a rolling boil (and your 15 minutes are almost up/ eggplant+broccoli is nicely roasted), toss in a little olive oil and the package of ravioli. Allow it to cook for about 75% of the package cooking time (it’s gonna go back in the oven!). Take eggplant + broccoli out of the oven.

Meanwhile, open up your jar of marinara and pour some into the bottom of a casserole dish. When the ravioli is done, drain and layer it on top of the marinara (we only had a layer 1 ravioli thick on the bottom).

I didn't roast my broccoli-- big mistake because they came out way under-done. roast yours!

Now, dollop your ricotta cheese evenly over the ravioli.

Then add a layer of your broccoli (you should get all of it on there). Top with more sauce.

The next layer is your roasted eggplant– layer it so that it completely covers the dish. Then pour remaining sauce over the top so that the whole thing is covered.


Bake for another 15-20 minutes and then remove and serve.

Hope some of you give it a try, it’s a pretty simple recipe but it does require more clean-up and more dirtied dishes than I usually like. Thankfully, when I cook the Hubs will clean after, so it worked out 🙂

Hi guys!! Hope you’re avoiding a case of the Mondays today! 🙂


This morning I was up before the crack of dawn, finishing up some last minute review and then taking my favorite guy to the airport 😦

Study/driving/test fuel:

surprisingly good! like a Cliff Z-bar, with a pretty clean ingredient list.


Did you know that carbs really are brain food? Your brain cells only use glucose as a food source (it’s a small enough molecule to cross the blood-brain barrier), and glucose is most readily broken down from carbohydrates. When you restrict carb intake, your body has to go through a long, more difficult process to break down protein into glucose, but that creates lots of side reactions and extra compounds, so it’s not efficient fuel for your brain!

Moral of the story– eat carbs before a mentally challenging task! 🙂


Following the carb trend, I had leftover pizza for breakfast part 2–

a slice of the good stuff.

Sorry guys, still in study mode here, but let me show you what i made for ‘brunch’ as well as post pictures from a little walk we went on during one of my study breaks!

After lunch (which I ate ON my notes), I studied a little more and then we went on a little walk to take a nice break. It’s been tolerable outside for the last couple days (in the 80’s, not 100’s), so it was especially nice today.

We walked to an arboretum that is SO unexpectedly close to where we live. It was beautiful!

Study Sunday(s)

Hello friends!! Hope you’ve been enjoying your Sunday so far 🙂


I’m having myself a little study party that will likely last all day (it lasted most of yesterday too…). Welcome to my new work schedule!!

My exams this quarter are on Monday and Wednesdays, and for the next 5 weeks I’ll be having an exam on both days. Therefore, for the next 5 weeks I will be studying the whole weekend. le sigh.


So first thing we started off with was this:

Last night I ended up having a midnight snack with the Hubs:

seriously, best pickles I've ever had.


I whipped up a quick salmon salad using canned wild Alaskan salmon with some mayo, dill, salt, and capers. Served with a side of this delicious pickles!

The open-faced ‘wich was mine, the whole sandwich was for the Hubs. Eaten standing at the counter.



We haven’t had breakfast yet, so I’m about to make a VERY traditional Sunday brunch– home-made pizza haha. I’ll give the deets later.
